French Coconut Pie
The recipe from the super-easy awesome coconut pie is from Purple Fried Okra. I don't know where PFO got the recipe; I'm just glad she sent it on to me! And now, to you:
French Coconut Pie3 eggs
1 t. vanilla
1-½ c. sugar
1 stick butter, melted
6 T. buttermilk
1 c. coconut
Mix all ingredients together; pour into uncooked deep-dish pie shell. Bake at 350 for 40-50 minutes, or until top is evenly browned. Pie will finish firming up as it cools.
Purple Fried Okra uses a purchased, rolled-up pastry crust and an aluminum deep-dish pie tin. I don't have a deep-dish pie tin, so I purchased a two-extra-serving graham cracker crust. I rarely see the deep-dish graham cracker crusts at the grocery store, but the extra serving crusts seem to work just as well.

Red Momo is homeless and unemployed. But only for a week... it's all technical.
Due to the relocation, the Red Momo Cookie Disposal Service is currently unavailable. We hope to re-open our doors (and mouths) very soon in our new Boston office.
Is anyone other than me so excited for November and pumpkin cheesecakes that they're having dreams? Just me is it? Oh well... it makes me happy :-)

I don't know that I'll ever be ready to eat another pumpkin cheesecake. Last Thanksgiving, GC's mom made a gooey pumpkin cake (from Paula Deen's recipe) and it is far better than any pumpkin cheesecake I've ever had. I think it will probably become the standby Thanksgiving dessert.
